Step-by-Step Instructions

1. Prepare the Chicken Wings:

  • Rinse the chicken wings under cold water and pat them dry with paper towels. Removing excess moisture helps achieve crispy skin.
  • In a large bowl, toss the wings with salt, pepper, garlic powder, and smoked paprika to coat evenly.

2. Cook the Wings:

Baking Method:

  • Preheat your oven to 400°F (200°C).
  • Place the wings on a wire rack set over a baking sheet lined with aluminum foil.
  • Bake for 40-45 minutes, flipping halfway through, until the wings are golden brown and crispy.

Frying Method:

  • Heat oil in a deep fryer or heavy-bottomed pot to 375°F (190°C).

3. Make the Sweet and Spicy Glaze:

  • In a small saucepan, combine honey, brown sugar, hot sauce, soy sauce, apple cider vinegar, and cayenne pepper.
  • Cook over medium heat, stirring occasionally, until the mixture starts to bubble and slightly thickens (about 3-5 minutes).

4. Toss the Wings in the Glaze:

  • Transfer the cooked wings to a large mixing bowl.

𝐈𝐧𝐬𝐭𝐫𝐮𝐜𝐭𝐢𝐨𝐧𝐬 :

  1. Dans un bol, fouettez la crème liquide en chantilly ferme.
  2. Dans un autre récipient, mélangez le mascarpone avec le sucre glace et l’extrait de vanille jusqu’à obtention d’une consistance lisse.
  3. Incorporez délicatement la chantilly au mélange mascarpone à l’aide d’une spatule pour ne pas faire retomber la crème.
  4. Lavez soigneusement les fruits rouges.
  5. Équeutez les fraises puis coupez-les en quartiers.
  6. Gardez les framboises, myrtilles et groseilles entières.
  7. Mélangez légèrement les fruits pour une répartition homogène.

  9. Ajoutez une couche généreuse de crème mascarpone par-dessus.
  10. Répétez l’opération si la verrine est grande, en terminant toujours par une couche de fruits frais.

  • 2 ribeye or New York strip steaks, about 1.5 inches thick

  • 2 tbsp olive oil

  • Salt and freshly ground black pepper, to taste

  • For the chimichurri sauce:
  • 1 cup fresh parsley leaves, finely chopped

  • 3 garlic cloves, minced

  • 2 tbsp fresh oregano leaves, finely chopped (or 1 tbsp dried oregano if fresh isn’t available)

  • 1⁄2 cup extra virgin olive oil

  • 2 tbsp red wine vinegar

  • 1⁄2 tsp red pepper flakes

  • 1⁄2 tsp salt, or to taste

  • 1⁄4 tsp freshly ground black pepper

Instructions

  1. Remove steaks from the refrigerator 30-45 minutes before cooking to bring them to room temperature. This helps them cook evenly.
  2. In a medium bowl, combine the parsley, garlic, and oregano. Add the olive oil, red wine vinegar, red pepper flakes, salt, and black pepper. Stir well to blend the ingredients. Taste and adjust seasoning if needed. Set aside for at least 10 minutes (or up to an hour) to allow the flavors to meld together. For best results, let it sit at room temperature.
  3. Pat the steaks dry with a paper towel to remove any surface moisture. This helps create a good sear. Generously season both sides with salt and freshly ground black pepper, pressing the seasoning into the meat.
  4. Place a cast-iron skillet or grill pan over high heat. Let it heat up for 3-5 minutes or until very hot. Add 2 tablespoons of olive oil and swirl the pan to coat it evenly. The oil should shimmer but not smoke excessively.

Instructions

  • In a small saucepan, combine the blackberries, blueberries, lemon juice, vanilla extract, honey, and water.
  • Simmer over a low flame, covered, for a few minutes until the blueberries have popped. Allow to cool, then strain to separate the liquid from the solids.

Whip the Cream:

  • Whip the heavy cream with 1 tbsp of granulated sugar using a mixer with a whisk attachment until stiff peaks form. Refrigerate until needed.

Prepare the Mascarpone Mixture:

  • In a different bowl, cream the egg yolks with the remaining granulated sugar until smooth.
  • Gradually add the Mascarpone cheese until fully incorporated.

Combine Whipped Cream and Mascarpone:

  • Gently fold the chilled whipped cream into the Mascarpone mixture using a spatula.
  • Divide this mixture into two bowls. Fold the solid berries into half of the Mascarpone mixture and set aside.
